– 1/2 cup honey– 1/2 cup creamy peanut butter– 5 cups Brown Rice Krispie cereal– 2 pints chocolate peanut butter ice cream, or your favorite ice cream– 12 ounces dark chocolate, chopped– 1 tablespoon coconut oil– Flaky sea salt

Use plastic wrap to line an 8x8 baking tray. Mix honey and peanut butter in a large microwave-safe bowl for 30 seconds to 1 minute until smooth.

Add Brown Rice Krispies and mix thoroughly. Put half the mix in the pan and compact it tightly. Place in freezer for 5 minutes.

Evenly cover Rice Krispies with ice cream. Press the remaining Rice Krispies evenly over the ice cream. Put in the freezer for 3 hours or overnight.

Melt chocolate and coconut oil in a microwave-safe bowl. Take the pan out of the freezer and cut 9 bars. Rapidly dip each bar in chocolate and place on a parchment-lined baking pan.

Sprinkle with salt. Put back in freezer for 5 minutes. Store in an airtight freezer container.
