My ideal morning starts with this sweet, healthy Morning Glory Bread. Serve it with coffee or tea for an afternoon snack or healthier dessert.
INGREDIENT
– 2 cups rolled oats*– 2 ripe bananas 1 cup mashed**– 2 large egg– 3 Tbsp avocado oil– 3 Tbsp pure maple syrup– 2 tsp pure vanilla extract– 1 tsp apple cider vinegar– 2 tsp baking powder– 1/2 tsp sea salt– 1 1/2 tsp ground cinnamon– 1 cup grated carrots about 1 large carrot– 1 cup grated apple about 1 large apple– 1/2 cup unsweetened shredded coconut optional– ½ cup raw pecans or walnuts chopped– 2/3 cup raisin
INSTRUCTIONS
Pre-heat the oven to 350°F and line a 9" x 5" loaf pan with parchment. If parchment paper is unavailable, spray the bread pan with cooking spray.
Step 1
Blend oats in a high-speed blender for 30 seconds to make flour. Mash bananas in a large bowl until creamy.
Step 2
Whisk eggs, avocado oil, pure maple syrup, vanilla extract, and cider vinegar until combined.
Step 3
Mix oat flour, baking powder, sea salt, and ground cinnamon in a separate bowl. Mix the flour mixture with the wet ingredients until a thick muffin batter forms.
Step 4
After grating the carrots and apple, add the shredded coconut, raisins, and pecans. Mix everything so the goodies are evenly distributed in the muffin batter.
Step 5
Fill the loaf pan with batter and spread evenly. Top the batter with chopped pecans if desired.
Step 6
Cover the loaf pan with foil and bake 40 minutes. Bake the bread for 20–35 minutes without the foil until it tests clean and is golden brown.
Step 7
Baked goods are done at 190–200°F. Insert a digital thermometer into the bread's centre and wait until the numbers stop moving for an accurate reading. If temperature requires, bake longer.
