INGREDIENT
– 3 large ripe bananas 1.5 cups mashed banana– 3 large egg– 1/4 cup pure maple syrup– 2 tsp pure vanilla extract– 2 2/3 cups finely ground almond flour– 1/2 cup tapioca flour or arrowroot flour**– 1 1/2 tsp baking powder– 2 tsp ground cinnamon optional– 3/4 tsp sea salt– 1 cup chocolate chips optional
INSTRUCTIONS
Pre-heat the oven to 350°F and line a 9" x 5" loaf pan with parchment. Mash bananas in a large bowl until creamy.
Step 1
Add eggs, pure maple syrup, and vanilla extract and mix well. Mix almond flour, tapioca flour, baking powder, cinnamon, and sea salt in a large bowl.

Combine dry and wet ingredients in a bowl to make a thick banana bread batter. If adding, mix in chocolate chips or chopped walnuts or pecans.

Put banana bread batter in the loaf pan and spread it evenly. To allow the bread to grow, tent the aluminium foil over the bread pan.

Bake foil-covered for 45 minutes on the centre rack of the preheated oven. Remove the foil and bake the loaf for 15–25 minutes until golden brown and cooked through.
Step 5
Baked goods are done when they reach 190–200 degrees Fahrenheit. Use an instant-read thermometer to check bread doneness.
Step 6
For an accurate reading, place the thermometer in the centre of the bread and wait for the numbers to stop moving.
Step 7
To get the best results, use a thermometer because bake time depends on elevation and ingredients. Before slicing and serving, let the bread cool to room temperature.
