– 3 Apple gala, peeled and sliced – ¼ cup Brown sugar packed light or dark – 2 tablespoon Unsalted butter – 1 tablespoon Cornstarch – ½ teaspoon Ground cinnamon – ½ cup White granulated sugar – 2 tablespoon Unsalted butter room temperature and cubed – ¼ cup Heavy cream room temperature – ½ teaspoon Salt – ½ teaspoon Pure vanilla extract – 3 ¼ cups All-purpose flour – 1 teaspoon Baking powder – 1 teaspoon Ground cinnamon – 1 teaspoon Cornstarch – 1 teaspoon Salt – 1 cup Unsalted butter melted and cooled – 1 cup Brown sugar packed light or dark – ½ cup White granulated sugar – 1 teaspoon Pure vanilla extract – 2 Large eggs room temperature – 2 tablespoon Unsalted butter melted – ½ cup White granulated sugar – 1 teaspoon Ground cinnamon
Peel and slice apples. Butter melts in a medium pot over medium heat. Add apple pieces, brown sugar, cornstarch, and cinnamon. Heat till bubbling. Then cook and stir for 5 minutes. The mixture thickens and apples soften.

Melt all sugar crystals in a small pot over medium heat. Let it amberize. This takes around 30 seconds. Remove heat quickly.Whisk in half the cubed butter until melted. Stir in the remaining butter.

This will boil and heat up. Whisk in half the heavy cream. Add remaining heavy cream.Add vanilla and salt. Let salted caramel and apple pie filling cool fully.

Mix flour, cinnamon, cornstarch, salt, and baking powder in a medium basin. Set aside.Mix melted butter (cooled to room temperature), brown sugar, sugar, vanilla, and eggs in a large bowl. Mix well.

Stir in the dry ingredients with a rubber spatula until barely mixed.Rest cookie dough for 10 minutes. Heat the oven to 350°F. Use parchment on two cookie sheets.

Use a big cookie scoop to scoop 6 dough balls per sheet. Use a ⅛th measuring cup or spice jar bottom to press a circle into the cookie batter. Lightly flatten the dough into a circle with your hand. See photos on my blog.

Bake 11 minutes. Press the measuring cup back into the hole after removing from the oven. Bake for another 1-3 minutes to brown the edges.Cool the cookies thoroughly on a rack.

Roll each cookie in cinnamon sugar after brushing it with melted butter using a pastry brush. Focus on the cookie's exterior, not the hole.Put apple pie filling in each hole. Then add salted caramel.
