Black Cat Pumpkin Cupcakes Recipe

– 1/2 cup melted coconut oil – 3/4 cup packed dark brown sugar – 1 tablespoon vanilla extract – 2 large eggs at room temperature – 1 1/2 cups pumpkin puree – 1 1/2 cups all-purpose flour – 1 1/4 teaspoons baking powder – 1/2 teaspoon baking soda – 3/4 teaspoon kosher salt – 1 tablespoon pumpkin pie spice VANILLA CREAM CHEESE FROSTING – 4 ounces cream cheese at room temperature – 2 sticks (16 tablespoons) salted butter at room temperature – 3 cups confectioners’ sugar – 2 teaspoons vanilla extract FOR DECORATING – Black food coloring or activated charcoal – Black sanding sugar – Gold sanding sugar – Black sprinkles and black licorice – Melted white chocolate – Toothpicks

To bake cupcakes. Preheat oven to 350°F. Paper-line 16 cupcake moulds. Beat coconut oil, brown sugar, vanilla, eggs, and pumpkin with a stand mixer or hand mixer until mixed.

Mix in flour, baking powder, soda, salt, and pumpkin spice. Blend until batter is lump-free. Evenly distribute batter in pans.

Bake 18-22 minutes until the tops are set and centre is no longer wiggly. Remove and cool. Make frosting. Beat cream cheese and butter for 2 minutes in a stand mixer until frothy.

Add vanilla and confectioners' sugar. Add 1 tablespoon activated charcoal or 2 drops black food colouring. Beat 2–4 minutes more to make the frosting light and fluffy.

To manufacture cat ears. Parchment a baking sheet. Spoon melted chocolate into a ziplock bag and cut a small corner. Fill two little triangles with chocolate.

Submerge one toothpick each triangle. Sprinkle gold sugar on chocolate and trace a triangle with it. Sprinkle black sugar on chocolate exterior. Make 16 ears by repeating this.

To form cat eyes. Draw two little white chocolate dots. Place one black sprinkle in the centre of each eye and sprinkle with gold sugar. Make 16 ears by repeating this.

Harden ears and eyeballs in the freezer for 15 minutes. Meanwhile, knife-frost or pipe frosting onto each cupcake using a small star piping tip. Lightly dust each cupcake with black sugar.

Put a frosting dot in the cupcake's middle for the nose. Get the ears and eyes from the freezer. Put ears in the cupcake and eyes in the frosting. Place 1" licorice strips on either side of the nose as whiskers.
