What's better than handmade chocolate fudge popsicles on a hot day? Easy pops are created with real food ingredients and no processed or added sweets, so I disagree. Naturally, they're wonderful, chocolatey, and creamy.

– 1 cup raw cashews– 1 1/2 cups full fat canned coconut milk– 1/2 cup pitted medjool dates– 2 teaspoons vanilla extract– 1 pinch flaky sea salt– 6 tablespoons brewed coffee– 8 ounces dark chocolate, melted

Warm up a little pot of water. It can sit for up to two hours after you add the cashews. Drain it.

Blend or process cashews, coconut milk, dates, vanilla, pinch of salt, and 2 tablespoons coffee in a high-powered blender. Blend until smooth and thick like a smoothie.

Evenly distribute the leftover coffee in 7-8 popsicle moulds. The coffee should swirl as you spoon the cashew mix over it. Insert popsicle sticks, cover moulds, and freeze for 4 hours until hard.

After 10 seconds in hot water, take the popsicles from the moulds.
Chocolate-dip each popsicle. Store frozen.
