Creamy Mashed Rutabaga Recipe

Mashed swede is a delicious low-carb side! Serve it with caramelised onions for epic flavour!

Caramelized Onions: – 3 Tbsp avocado oil – 2 large yellow onions sliced Mashed Rutabaga: – 2 lbs rutabaga peeled and cut into 2-inch chunk – 3 Tbsp ghee or grass-fed butter, melted – 1/2 cup full-fat canned coconut milk – 1/4 tsp ground nutmeg – 1/2 tsp garlic powder omit for Low-FODMAP – 1 tsp dried parsley – 3/4 tsp sea salt to taste

Heat avocado oil in a large skillet on medium. Sauté the sliced onions, turning periodically, for 15–20 minutes until transparent and browned around the edges.

Cook onions over medium-low heat for 30–40 minutes, stirring regularly, until caramelised. If the onions stick to the skillet, deglaze it with a few tablespoons of water two or three times.Turn the radishes cut-side down.

Prepare rutabagas while onions caramelise. Peel and cut rutabagas into 2-inch cubes. Add chopped rutabagas to boiling water. Boil till tender, 20–25 minutes.

Blend strained rutabagas in a powerful processor. Blend other ingredients until smooth. Stop the blender/food processor multiple times to scrape the sides to combine faster.

For those without a powerful blender or food processor, return everything to the hot pot and mash with a masher.

Check mashed swede for flavour and add additional ghee, coconut milk or sea salt. Serve with your favourite dish.
