Just a few ingredients make these fresh fruit popsicles! Easy peach popsicles are a delicious summer dessert that are dairy-free, vegan, and paleo.
INGREDIENT
– 3 medium-sized peaches 1.3 lbs, peeled and chopped– 1 15-oz can full-fat coconut milk– ¼ cup pure maple syrup– 1 Tbsp fresh lemon juice– ½ tsp sea salt
INSTRUCTIONS
Peel, pit, and chunk peaches.Mix peach slices and other popsicle ingredients in a high-powered blender or food processor until smooth.
Step 1
Taste and add pure maple syrup or lemon juice to popsicles. Pour mixture almost to the top of your popsicle mould. Put the popsicle mould lid on and add sticks.
Step 2
Set popsicles in the freezer for 2–4 hours. Size and peach mixture temperature determine popsicle freeze time.
Step 3
Take the popsicles out of the mould to eat after a few minutes of thawing. Running warm water around the popsicle mould speeds up release.
Step 4
Frozen popsicles can be stored in the mould or a large zip lock bag or airtight container for 3 months. Individually wrapping popsicles in plastic wrap before freezing extends their shelf life.
