Crock Pot Chicken Tortilla Soup Recipe 

This delicious slow cooker chicken tortilla soup recipe is easy to customise with your favourite toppings! Family favourite for autumn and winter.

INGREDIENT

– 1 medium-sized yellow onion chopped – 6 cloves garlic minced – 2 tsp chili powder – 1 tsp ground cumin – ½ tsp ground paprika – ½ tsp dried oregano – 1 tsp sea salt – 1.5 lbs boneless skinless chicken thighs or chicken breast – 1 (28-oz) can crushed tomatoes – 1 (7-oz) can diced green chili – 2 cups chicken broth – 1 (15-oz) can corn, drained – 1 (15-oz) can black beans, drained Fried Corn Tortilla Strips (Optional): – ¼ cup avocado oil – 6 to 8 corn tortillas sliced For Serving: – Avocado diced – Shredded cheese – Fresh cilantro – Sour cream

INSTRUCTIONS

Put everything in the crock pot for soup. Shredded chicken eliminates the need to chop. Mix well to distribute ingredients.

Step 1

Cover your crock pot and cook on high for 4 hours or low for 6–8. With pre-cooked chicken, this slow cooker soup cooks in 3 hours on high.

Step 2

Shred chicken breasts with two forks on a cutting board after slow-cooking soup. Chicken can be chopped before shredding.

Step 3

Return shredded chicken to crock pot and stir soup. Serve homemade tortilla strips with chicken tortilla soup.

Step 4

In large bowls, add tortilla strips (or chips), Monterey jack, cotija, cheddar, sour cream, cilantro, green onions, fresh limes, diced avocado, and more to soup.

Step 5

Homemade Tortilla Strips: Use a sharp knife to cut 6-8 corn tortillas into ¼-inch to ½-inch wide strips on a cutting board.

Step 6

Add ¼ cup of high-temperature cooking oil (e.g., avocado, canola, or vegetable) to a large nonstick skillet and heat. Oil should sizzle after a few minutes. 

Step 7

Place 4–6 corn tortilla strips in oil carefully. Strips should be crisp and golden brown after 2–3 minutes. Repeat with the remaining crispy tortilla strips on a paper towel-lined plate.

Step 8

Put crispy tortilla strips in the soup or have everyone put them in their bowls.
