Easy Mediterranean Pasta Salad Recipe

Pasta salad is important year-round. It's great for summer barbecues but vital for breakfasts and gatherings. Also ideal for quick, family-friendly midweek dinners.

Ingredient

– 12 ounces pasta – ½ red onion – 1 English cucumber – 1 cup grape tomatoe – 1 (14-ounce) can artichoke hearts packed in water – ½ cup fresh basil – ¼ cup olive oil – ¼ cup red wine vinegar – 1 lemon, juiced – 2 teaspoons dried oregano – 1 teaspoon garlic granule – 1 teaspoon coarse salt – ½ teaspoon black pepper – ⅔ cup Kalamata olive – ½ cup feta cheese – ¼ cup pine nut

Direction

Prepare the pasta in accordance with the stipulations on the box.

While the grape tomatoes are being cut in half, the red onion should be sliced, and the cucumber should be cut into half moons.

The artichoke hearts should be chopped, and the basil should be sliced into tiny slivers.

Mix olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, garlic granules, salt, and pepper in a small bowl.

After cooking, rinse pasta in cold water and allow cool for 5 minutes.

Add red onion, cucumber, tomatoes, artichoke hearts, basil, olives, feta cheese, and pine nuts to a large bowl.
