Flourless Peanut Butter Chocolate Chip Cookies Recipe
Perhaps the easiest cookie recipe ever! Flourless peanut butter cookies are easy to make without baking experience!
INGREDIENT
– 1 cup (250g ) unsweetened peanut butter (crunchy or creamy)– 1 large egg– 3/4 cup (150g) granulated sweetener of choice*– 1 teaspoon pure vanilla extract optional– 1/2 teaspoon baking soda– ½ tsp (3g) sea salt**– 1/2 cup (80g) chocolate chip
INSTRUCTIONS
Pre-heat the oven to 375°F and line a large cookie sheet with parchment. You can also spray the large baking sheet with cooking spray without parchment.
Step 1
In a large bowl, mix the egg, peanut butter, vanilla extract, baking soda, and sea salt (except the chocolate chips).
Step 2
Mix everything into a sticky, thick dough. I mix with a fork, but you can use an electric or hand mixer.
Step 3
Mix the chocolate chips into the cookie dough until well combined. Roll peanut butter cookie dough into balls and place them on the baking tray at least 1 inch apart.
Step 4
Press cookie dough balls into flat discs gently. You can press the dough back together if it cracks.
Step 5
Leave room for the cookies to grow as the dough spreads during baking. Press extra chocolate chips into cookie tops if desired.
Step 6
Bake on the centre rack of the preheated oven for 12–15 minutes until the edges are slightly golden brown and the cookies have set.
Step 7
Remove cookies from cookie sheet after they've cooled completely. They crumble easily if moved while warm because they are delicate before setting up.
