– 1 large sweet potato chopped into ½-inch round
– 2 slices thick-cut bacon cooked
– 1 large avocado peeled
– 2 tablespoons fresh lime juice
– 1 jalapeno seeded and finely chopped
– 1 clove garlic minced
– 3 tablespoons red onion finely chopped
– 1/8 teaspoon to ¼ fine sea salt to taste

Heat the oven to 400°F. Slice the sweet potato into 1/2-inch rounds after washing and drying.

Sprinkle salt and grapeseed or olive oil on both sides of sweet potato slices and lay on a baking pan.
