– 1 large sweet potato chopped into ½-inch round – 2 slices thick-cut bacon cooked – 1 large avocado peeled – 2 tablespoons fresh lime juice – 1 jalapeno seeded and finely chopped – 1 clove garlic minced – 3 tablespoons red onion finely chopped – 1/8 teaspoon to ¼ fine sea salt to taste For Serving: – Cotija Cheese – Green onion chopped

Heat the oven to 400°F. Slice the sweet potato into 1/2-inch rounds after washing and drying.

Sprinkle salt and grapeseed or olive oil on both sides of sweet potato slices and lay on a baking pan.

Bake for 20 minutes, flip, and bake for 10–15 minutes until rounds are cooked through and crispy. Let sweet potato rounds cool on a plate.

Flip the bacon occasionally over medium heat until crispy, about 5 minutes. Remove bacon to a cutting board and chop when cool.

Mash all guacamole ingredients in a bowl with a fork till desired consistency. I like mine hefty.
