It's easy to make shishito peppers that are roasted and topped with garlic and butter. This makes a great appetiser or side dish for a crowd.
– 2 tsp avocado oil– 8 ounces shishito pepper– 4 cloves garlic minced– 1 Tbsp unsalted butter– Sea salt and black pepper to taste

Put the shishito peppers in a strainer and wash them with cold water to remove any excess water.

Applying a paper towel or a kitchen towel to the peppers will help them become dry.

Use two teaspoons avocado oil in a 12-inch cast iron pan over medium-high heat. Heat the skillet before adding shishito peppers.

For ready, gently flick a drop of water on the skillet. Aggressive sizzling signals ready. For good char, roast peppers in a single layer for 6 minutes, stirring well every minute.

Add garlic and butter and mix. Cook for 2 more minutes until the peppers are done.
