1
Cut sweet potatoes into 1 ½” to 2” rounds. Fill a large pot with water. The potatoes should be quite mushy when probed in the centre after 15–20 minutes of boiling.
2
A colander should be used to drain the potatoes after they have been removed from the hob.
3
A high grill's second-to-top rack needs a wrack. Avocado oil a large baking sheet. Fork or potato masher mash potatoes into ¾-inch patties on a baking pan.
4
Mix garlic with melted butter in a saucepan over medium-high heat. Sauté 2–3 minutes until fragrant. Remove from heat and stir in honey until incorporated.
5
The oven shelf second from the heat source should broil potatoes for 5–8 minutes. Sprinkle 1 heaping tablespoon of garlic butter mixture on each potato after baking.
6
Return the potatoes to the oven and broil for 5–10 minutes until crisp. Potatoes burn easily under the grill, so watch them. The time depends on their size.
7
Enjoy mashed sweet potatoes with your main entrée! Crispy skin potatoes can be refrigerated for 5 days in an airtight container.
