Apple Cinnamon Mixture: – ½ cup coconut sugar* – 1 Tbsp ground cinnamon – 1 granny smith apple peeled, cored, and finely chopped – 1 tsp olive oil – pinch salt For the Gluten Free Bread: – ½ cup unsalted butter softened – 2/3 cup coconut sugar** – 2 tsp pure vanilla extract – 2 egg – 1½ cups gluten-free flour blend – 1½ tsp baking powder – 1 tsp kosher salt – ½ cup full-fat Greek yogurt
After you add the Greek yoghurt, mix it in until it's smooth and well mixed. It's normal for the dough to be very thick and sticky.
Cover the loaf pan with half of the bread dough.Put in two thirds of the apple cinnamon mix and use a spoon to press it into the dough.
Put in the rest of the bread dough and then the rest of the apple cinnamon filling.
