Grilled Salmon Salad with Strawberry Salsa Recipe

Strawberry-Grilled Salmon The only summer salmon salad recipe you need is salsa!

INGREDIENT

For the Grilled Salmon – 1 pound salmon fillet – 2 Tbsp olive oil – 1 tsp garlic powder – 1 tsp onion powder – 1/2 tsp paprika – ¼ teaspoon sea salt to taste Strawberry Salsa: – 6 large ripe strawberries finely chopped – 1 jalapeno seeded and chopped – 1/2 cup red onion finely chopped – 1 clove garlic minced – 2 Tbsp fresh lime juice – Pinch sea salt to taste Arugula Salad: – 5 ounces baby arugula – 1 large ripe avocado diced – 3 radishes thinly sliced Strawberry Balsamic Vinaigrette – 1/3 cup olive oil – ¼ cup balsamic vinegar – 1 Tbsp fresh lemon juice – 1/2 teaspoon lemon zest – 3 ripe strawberries chopped – 2 Tbsp honey to taste – 1 Tbsp dijon mustard to taste

INSTRUCTIONS

All ingredients for Strawberry Vinaigrette should be blended until smooth. Save in a jar or sealable container. Mix ingredients in a bowl for Strawberry Salsa. Refrigerate until needed.

Step 1

Mix the ingredients in a large bowl and add strawberry vinaigrette to make the Arugula Salad. Keep cold until salmon is done.

Step 2

Grilled salmon goes on a large plate, baking sheet, or casserole dish. Drizzle olive oil. Cover the flesh with oil with your hands. Sprinkle the fish with your homemade or favourite spices.

Step 3

Grease your grill after scraping food. It prevents fish from sticking to the grill. Heat the grill to medium-high (400–450 degrees F) covered. Note: Heat charcoal in a chimney starter until many are white before spreading them into the grill.

Step 4

Leave the salmon skin-side down on the grill for 5–6 minutes. Cook the other side for 2 minutes until grill marks appear. 

Step 5

The one-inch salmon fillet grills in 8 minutes. Thicker fillets take 10–12 minutes. Cook the salmon centre less if you like it rare). 

Step 6

An internal temperature of 145 degrees F indicates cooked salmon. To get an accurate temperature, insert a meat thermometer into the fillet thicket.

Step 7

Leave grilled salmon on a cutting board for 10 minutes. Sharply cut fillets to serve. Strawberry salsa on rocket salad with salmon.
