A healthy mug-sized cinnamon roll you can make whenever you want one! This sugar-free, gluten-free, and dairy-free dessert is easy to make.
Cinnamon Roll:– ⅓ cup (40g) gluten-free all-purpose flour*– 2 Tbsp (14g) protein powder– ¼ tsp baking powder***– Pinch sea salt– ¼ cup (60g) Greek yogurt**– 1 tsp pure maple syrupCinnamon Roll Filling:– 1 tsp (5g) coconut oil, softened– 1 tsp (5g) coconut sugar****– ½ tsp ground cinnamon– Pinch sea saltOptional Frosting:– ¼ cup (50g) Greek yogurt– 1 Tbsp pure maple syrup

Stir together gluten-free all-purpose flour, protein powder, baking powder, and sea salt in a small bowl.

Pure maple syrup and Greek yoghurt (or full-fat canned coconut milk) should be added.

Mix everything together well until you get a thick, sticky dough. That's okay; the dough will be very wet and sticky.

On a level cutting board, flour parchment paper generously. On a lightly floured board, knead cinnamon roll dough several times and press it into a rectangle.

In a separate small bowl, mix the coconut sugar, cinnamon, and sea salt for the cinnamon roll filling.

After spreading the coconut oil that has been softened uniformly over the dough, sprinkle the cinnamon sugar mixture on top of the dough in an even layer.

Like cinnamon rolls, roll the dough into a log and then into a circle. Transfer to microwave-safe cup.

Standard high microwave for 1 minute. Cooking duration depends on microwave, but 1–1.5 minutes works well in most.

Make cinnamon roll icing in a basin. Choose Greek yoghurt, full-fat coconut milk, pure maple syrup, or powdered sugar coating. Frost and enjoy the roll!
