Fresh peach cookies without flour, butter, or sugar! Easy 5-ingredient Peach Muesli Cookies are soft, chewy and a great snack!
INGREDIENT
– 2 ripe bananas mashed (⅔ cup)– ¼ cup (60 ml) pure maple syrup– 2/3 cup (160 g) unsweetened almond butter– 2 cups (180 g) quick oats– 1/2 tsp sea salt– 1 large ripe peach chopped into small chunks (about 1 cup)Optional Additions:– 1 tsp pure vanilla extract– 1 tsp ground cinnamon
INSTRUCTIONS
Pre-heat the oven to 350°F and line a large baking sheet with parchment. Instead of parchment paper, spray the baking sheet with cooking spray.
Step 1
Mash bananas in a large bowl to remove most of the lumps.Add almond butter and pure maple syrup and mix until a thick, sticky, creamy consistency forms.
Step 2
Mix in dry ingredients like oats and sea salt until a thick dough forms. Finally, gently stir in chopped peaches. Spoon peach mixture onto prepared cookie sheet, making any size cookies.
Step 3
Shape cookie dough accordingly since cookies will stay the same size and shape. I like big cookies, but you can make small ones too.
Step 4
Bake the cookies for 10–15 minutes until the edges are lightly golden brown and they feel set when poked.
Step 5
Smaller cookies take 8–10 minutes, while larger ones take 12–15 minutes. Remove cookies from cookie sheet after they cool to room temperature. Serve and enjoy!
