This easy recipe for Homemade Aussie Bites makes the best low-sugar treat! Ideal for school lunches or light snacks.
INGREDIENT
– 2 Tbsp ground flax seeds– 6 Tbsp water– 3 Tbsp avocado oil– ⅓ cup pure maple syrup or honey– 1 tsp pure vanilla extract– ¾ cup oat flour*– ¾ cup rolled oats*– ¼ tsp baking soda– ½ tsp sea salt– ½ cup unsweetened shredded coconut– 1/3 cup dried apricots chopped**– ¼ cup unsalted sunflower seedsOptional Additions:– 1 to 3 Tbsp brown sugar– 1 tsp ground cinnamon
INSTRUCTIONS
Heat the oven to 350°F. Mix ground flax seeds and water in a small bowl to make flax “eggs”.
Step 1
Let this mixture sit for 10–15 minutes, stirring occasionally, until the flax eggs are thick and resemble beaten eggs.
Step 2
Add the flax mixture, avocado oil, honey (or pure maple syrup), and vanilla extract to a large bowl. Mix wet ingredients well.
Step 3
Stir together oat flour, rolled oats, baking soda, and sea salt in a small bowl. Mix the dry ingredients with the wet ingredients until a thick, sticky batter forms.
Step 4
Add shredded coconut, chopped dried apricots, and sunflower seeds and mix well.
Spray muffin tins with oil.
Step 5
This recipe yields 7 large Aussie bites, but you can make more smaller ones. Place the Aussie bite batter in the muffin tray and gently press it into an even layer.
Step 6
Bake Aussie bites on the centre rack of the preheated oven for 12–15 minutes until golden brown around the edges.
Step 7
Let the Aussie bites cool completely before removing them from the muffin tin. I use a paring knife to release the bites from the tray.
