– 1 ½ lbs boneless skinless chicken breast– 4 Tbsp avocado oil– Zest of 1 lemon– 4 Tbsp fresh lemon juice– 5 cloves garlic minced (2 Tbsp)– 1 tsp onion powder– ½ tsp ground paprika– 1 tsp sea salt– 2 Tbsp ghee or butter for cooking.

Pack bite-sized chicken pieces in a ziplock bag. Besides ghee/butter, add avocado oil, lemon zest, lemon juice, garlic, onion powder, paprika, and sea salt.

Seal the bag and stir the chicken to coat it in marinade. Take 15 minutes to 24 hours to refrigerate.

When ready to cook, heat two tablespoons of ghee or butter in a big skillet on high.

Add chicken to a hot skillet and distribute evenly. Cook chicken 5 minutes without stirring. A lot of liquid burns.

After 5 minutes, stir the chicken and cook for 6–8 minutes, stirring every couple of minutes, until most of the liquid has evaporated and the chicken is golden brown.

Chicken is thoroughly cooked after 7–8 minutes. You can stop cooking or continue for a golden-brown sear.
