In addition to being vegan and gluten-free, finger sandwiches made with mashed avocado are a quick and entertaining appetiser option.
– 3 large ripe avocados peeled and diced– 1/4 cup to 1/3 cup fresh herbs finely chopped– 2 tablespoons fresh lime or lemon juice– 2 tablespoon tahini– 1/4 teaspoon sea salt to taste– 8 pieces gluten-free or whole grain sandwich bread crusts removed– ½ medium cucumber thinly sliced (16 slices)– 1 carton sprouts or microgreen

Mash all the ingredients for the mashed avocado in a mixing dish with a fork until desired texture (I leave it chunky).

Cut the crusts off 8 slices of whole grain bread (or any bread) and chop each slice into 4 squares.

Spread 1-2 tablespoons of mashed avocado mixture on half the bread pieces to make finger sandwiches.

Top with sprouts, one cucumber slice, and the remaining bread slices. Serve and enjoy!
