No-Bake Oatmeal Peanut Butter Cups Recipe

These easy-to-make oatmeal peanut butter cups are perfect for chocolate and peanut butter lovers! Simple ingredients make these treats perfect for summer when you don't want to bake but can be enjoyed year-round.

INGREDIENT

Peanut Butter Layer: – 1 cup unsweetened peanut butter – ⅓ cup pure maple syrup – 1 tsp pure vanilla extract – 1 ½ cups quick oats or rolled oat – ¼ tsp sea salt Chocolate Layer: – ⅔ cup chocolate chip – 1 Tbsp coconut oil* – Flaky sea salt optional

INSTRUCTIONS

Combine peanut butter, pure maple syrup, and vanilla in a bowl. Refrigerated peanut butter should be microwaved for 20 seconds to soften and make stirring easier. 

Step 1

To heat the ingredients, use a small saucepan on the stove or a mixing bowl. Stir in oats and sea salt to make a thick dough.

Step 2

Spray 8–10 muffin tin holes lightly with cooking spray. Peanut butter cups come out of the muffin tray after setting. Smaller chocolate peanut butter oat cups can be made in mini muffin tins.

Step 3

Make peanut butter cups by dividing the mixture into 8–10 muffin holes (I make 8 large ones).

Step 4

Melt chocolate chips and coconut oil (or butter or peanut butter) in a microwave-safe bowl for 20 seconds at a time, stirring well.

Step 5

Put melted chocolate on peanut butter. Peanut butter cups' chocolate layers can be sprinkled with flaky sea salt.

Step 6

To set, freeze peanut butter cups for 1-2 hours. Use a butter knife to remove peanut butter cups from muffin tins. Enjoy!
