These tasty, refined sugar-free, vegan, and flourless blueberry banana cookies make a great snack or dessert. Try different add-ins for this cookie recipe.
INGREDIENT
– 3 ripe bananas 1 ½ cups, mashed– ½ cup creamy almond butter well-stirred– 2 cups mixed raw nuts roughly chopped– 1 cup fresh blueberrie– ½ tsp ground cinnamon– Pinch sea salt
INSTRUCTIONS
Heat a 350-degree oven. Use parchment on a large baking sheet. Process nuts in a food processor until roughly chopped. No need to grind them finely—the chunks give cookies texture.
Step 1
Mash bananas in a bowl until creamy. Add unsweetened almond butter and mix until sticky. Mix chopped nuts, cinnamon, and sea salt in the bowl.
Step 2
Add fresh blueberries gently. You shouldn't form cookies with your hands because this mixture is sticky. I promise it will set in the oven despite gooeyness. This is normal.
Step 3
Place circles of cookie dough on the baking sheet. You can bake any size cookie. I make big cookies because I'm animal. Bake cookies 15–18 minutes at 350 until set.
Step 4
Bake smaller cookies for 10–15 minutes and larger ones for 15–18 minutes until the edges are slightly golden brown. Once cooled, serve the cookies.
