Whole grain banana bread with berries for a healthier treat! This dairy-free, refined sugar-free banana bread recipe is easy to customise and makes a great breakfast or snack.
INGREDIENT
– 2 cups rolled oats*– 2 large ripe bananas 1 cup mashed– 2 large egg– 3 Tbsp avocado oil– 3 Tbsp pure maple syrup– 1 tsp pure vanilla extract– 2 tsp baking powder– 1 tsp sea salt– 1 ½ cups fresh strawberries chopped
INSTRUCTIONS
Preheat oven to 350°F and line a 9" x 5" loaf pan with parchment. Parchment paper removes easily. Alternatively, spray the bread pan with cooking spray.
Step 1
Blend oats in a high-speed blender for 30 seconds to make flour. Mash bananas in a big bowl until creamy. Stir in eggs, avocado oil, pure maple syrup, and vanilla.
Step 2
Mix oat flour, baking powder, and sea salt into the wet mixture. Mix everything into a thick batter. Add chopped fresh strawberries.
Step 3
Evenly distribute banana bread batter in the pan. Top batter with chopped strawberries if desired.
Step 4
Cover the loaf pan with coloured aluminium foil to grow bread. Remove foil halfway through baking on the centre rack of the preheated oven for 60–75 minutes.
Step 5
Removing the foil halfway through gives the bread a perfect golden brown top. Cleaning and 190–200 degrees Fahrenheit indicate fully baked bread.
Step 6
Check the bread's centre temperature with a digital thermometer. Use the thermometer trick to determine bake time for best results.
