Old Fashioned Baked Beans Using Canned Bean Recipe
Old-fashioned baked beans have a substantial, warming taste and a homely scent. White beans are traditionally soaked and slow-cooked or baked to perfection. I tried to shorten the cooking time to provide a faster, delicious, protein- and fiber-packed meatless dinner.
Ingredient
– 1lb dried navy bean– 1⁄2cup chopped onion, plu– 1small onion, whole, peeled– 1⁄2cup molasse– 1teaspoon dry mustard– 1⁄4cup brown sugar, packed– 1⁄2cup maple syrup– 1tablespoon ketchup– 2teaspoons prepared yellow mustard– 1⁄2cup orange juice– 1teaspoon salt– 1⁄4lb salt pork, slice

Rinse and sort beans. Add three times as much water to beans in a big plastic container. Cover and chill overnight.

Drain beans. Beans and chopped onion in large pot. Cover with water and boil. Simmer covered for 30 minutes. Drain liquid into a small basin for sauce and cooking.

Put 1/2 cup of bean liquid in a bowl. Mix in orange juice, molasses, maple syrup, ketchup, and mustard. Stir with brown sugar. Mix in the dry mustard and salt last.

In a 2-quart bean crock or covered baking dish, arrange half the salt pork and all the beans, burying the peeled, entire onion.

Cover beans with sauce and just enough leftover bean liquid. Top with remaining salt pork. Cover and bake at 300 degrees for 4 hours, monitoring often.

Add some of the bean juice if beans feel dry. Bake for another hour after uncovering.
