Raspberry Crumb Bars Recipe

Fruit lovers will love these simple gluten-free Raspberry Crumb Bars, which are rich and buttery despite being dairy-free. Plus, their berry tang makes them the perfect sweet treat! 

INGREDIENT

For the Raspberry Filling: – 4 cups fresh raspberries about 18 ounce – 2 Tbsp granulated sugar or pure maple syrup – 2 Tbsp gluten-free all-purpose flour* – Pinch sea salt Shortbread Crust and Topping: – 2 ¼ cups gluten-free all-purpose flour – 2 cups gluten-free rolled oats – 1/2 cup granulated sugar or pure maple syrup** – 1/2 tsp sea salt – 3/4 cup coconut oil melted*** – Pinch sea salt Optional Glaze: – 1 cup powdered sugar – 2 Tbsp water or lemon juice

INSTRUCTIONS

Preheat oven to 350°F and line an 8" x 8" pan with parchment. Parchment paper removes bars from square baking pans better than oil. 

Step 1

For the shortbread crust and topping, mix gluten-free all-purpose flour, oats, granulated cane sugar, and sea salt in a large bowl.  

Step 2

Mix melted coconut oil (or avocado oil or butter) into the crumb mixture to make a thick dough. Food processors and stand mixers with paddle attachments can replace mixing bowls! 

Step 3

Reserve ½ cup of crumble mixture for topping. Press the remaining dough into an even layer in the baking dish with your hands or a wooden spoon.  

Step 4

Press crust into pan bottom to keep bars together. Puncture crust several times.Bake the crust for 15–18 minutes on the centre rack of the preheated oven until lightly golden brown. 

Step 5

While crust bakes, make raspberry filling. Add sugar and raspberries to a lidded saucepan. Boil raspberry juices medium. Fork-mash raspberries and dissolve gluten-free all-purpose flour.  

Step 6

Remove raspberry filling from heat. Hold until use. Raspberry filling should be thick like stirred jam, not preserves. 

Step 7

Spread raspberry filling evenly on pre-baked crust.Crush remaining dough on raspberry layer. Bake raspberry bars 22–30 minutes until crumble turns colour. 

Step 8

Cool to room temperature without oven bars. Wrap bars in plastic and chill until serving. This refrigerant cuts bars well. Sharply cut raspberry muesli bars into board squares. Enjoy the bars or drizzle the glaze. 

Step 9

For a creamy glaze, dissolve 1 cup powdered sugar in 2 tablespoons water or lemon juice in a small bowl. Finish the bars with glaze and enjoy!
