This dairy-free Smothered Pork Chops recipe is easy to make any night of the week! To complete the meal, add mashed potatoes or bread and veggies!
– 2 Tbsp avocado oil– 4 to 5 pork chops*– 2 Tbsp unsalted butter– 1 large yellow onion diced– 8 ounces mushrooms chopped– 5 cloves garlic minced– 2 Tbsp gluten-free all-purpose flour– 1 ½ cups beef broth– 2 tsp dijon mustard– 2 tsp Worcestershire sauce– 1 Tbsp dried oregano– ½ tsp sea salt to taste– ¼ tsp black pepper to taste

Place the pork chops on a large dish or chopping board. Pat excess moisture with paper towels. Season both sides of pork chops with sea salt and pepper.

Heat avocado oil in a large skillet on high. My large nonstick skillet works, but cast iron does too. Heat the oil until the skillet sizzles for several minutes.

Season and cook pork chops for 3–4 minutes on hot surface till golden brown. Flip, cook 2–3 min. Place pork chops on plates. They won't finish cooking.

Butter and relight skillet. Reduce heat to medium-high. Sauté chopped onion for 8–10 minutes, turning occasionally, until softened and brown.

Add minced garlic and chopped mushrooms and simmer for 2–3 minutes until aromatic and mushrooms soften. Mix the flour with the onions and mushrooms.

Let the skillet boil with beef stock, dijon mustard, worcestershire sauce, and dried oregano.Stir occasionally until gravy thickens and pulls away from skillet.

Return cooked pork chops to skillet with gravy. Cook pork chops at a full but controlled boil for 6–8 minutes, flipping once or twice, or until done.

For best results, remove pork chops off stove top after 145 degrees Fahrenheit. Check the pork chop thicket temperature using a meat thermometer.

Let pork chops rest for 5–10 minutes before serving. Cook them to 150 degrees F. Enjoy smothered pork chops with your favourite sides!
