Gluten-free almond flour Spiced Apple Carrot Muffins for autumn. These moist and fluffy muffins made with healthy ingredients will make you want to read a book and drink tea.
INGREDIENT
– 2 large egg– 3 Tbsp avocado oil– 3 Tbsp pure maple syrup– 1 tsp apple cider vinegar*– 2 cups finely ground almond flour– ½ tsp baking soda– 1 ½ tsp ground cinnamon– ½ tsp ground ginger**– ⅛ tsp ground nutmeg– ½ tsp sea salt– 1 large carrot grated (about 1 cup of shredded carrot)– 1 large Fuji apple peeled and grated
INSTRUCTIONS
Apple and carrot grate with box grater. Use one cup of each. Pre-heat the oven to 350°F and line a muffin tray with 7 papers.
Step 1
Whisk eggs, avocado oil, pure maple syrup, and cider vinegar in a large bowl. In a separate bowl, combine almond flour, baking soda, ground cinnamon, ginger, nutmeg, and sea salt.
Step 2
Add flour to wet ingredients bowl and stir. Mix grated carrots and apple into muffin batter. Fill each cup ⅔ with muffin batter in the prepared tin.
Step 3
Muffins on the centre rack should be clean after 20–25 minutes. It takes 22 minutes. Muffins are done at 190-200°F.
Step 4
Check muffin doneness with a digital thermometer in the centre. To check muffin cleanliness, use a toothpick or butter knife.
Step 5
Remove the muffin papers and enjoy when the muffins are room temperature.
