An easy, healthy Strawberry Muffin recipe the whole family will love! This tasty muffin recipe uses healthy ingredients, less sugar, and less fat for a healthier snack or breakfast.
INGREDIENT
– 2 cups rolled oats– ⅔ cup unsweetened applesauce– 2 large egg– 3 Tbsp avocado oil– 3 Tbsp pure maple syrup– 1 tsp pure vanilla extract– 1 tsp apple cider vinegar– 2 tsp baking powder– 1/4 tsp baking soda– 1 tsp sea salt– 1 ½ cups fresh strawberries chopped
INSTRUCTIONS
Bake muffins at 350°F with paper liners. Turn oats into flour in a high-powered blender or food processor. Blend baking powder, baking soda, and sea salt for 10 seconds.
Step 1
Mix applesauce, eggs, avocado oil, pure maple syrup, vanilla extract, and cider vinegar in a large bowl. Combine dry and wet ingredients into a smooth batter.
Step 2
Mix chopped strawberries into batter. In the prepared pan, fill muffin holes ⅔ full with batter. Completely filling the holes makes 9 muffins.
Step 3
Top muffins with strawberries and oats. In the preheated oven, bake muffins on the centre rack for 38–35 minutes until clean. Bake for 30 minutes.
Step 4
The muffins are done when golden brown and a toothpick or butter knife comes out clean. Use a digital thermometer to check muffin doneness.
Step 5
Place the thermometer in the muffin centre. Baked goods are done at 190–200°F. How much batter in muffin cups determines baking time.
